If you want a crispier homemade pizza crust, two of the most popular upgrades are a pizza steel and pizza stone. Both provide a hot, heat-retaining surface that transfers energy directly into the dough, helping the bottom of the pizza brown and crisp more effectively than a thin baking tray.
But they don’t behave exactly the same way.

It works by absorbing heat during preheating and then transferring that stored heat into the pizza dough. Cordierite is particularly popular because it can withstand repeated exposure to high temperatures when used and cooled correctly.
Pizza stones aren’t limited to pizza. A good baking stone can also be useful for bread, flatbreads, and other baked foods where you want a strong, stable cooking surface.

1. Heat Transfer: Pizza Steel Has the Advantage

That’s particularly useful in a conventional home oven. You can’t simply turn most household ovens up to the temperatures used by specialist pizza ovens, so improving the efficiency of heat transfer at the cooking surface can make a noticeable difference.
Chef’s verdict: If your priority is maximum heat transfer and a deeply browned bottom crust, I’d give the edge to pizza steel.
2. Crust Texture
Both surfaces can produce excellent pizza, but the crust can have a slightly different character.
A pizza steel is particularly effective at producing a strongly browned, crisp underside because of its rapid heat transfer.
A pizza stone provides a more gradual heat transfer and can still produce an excellent crisp crust when thoroughly preheated. It is also a versatile surface for bread and other baked foods.
However, don’t expect either surface to compensate for poor dough preparation. Hydration, fermentation, thickness, toppings, and oven temperature all influence the final crust.

3. Preheating Matters for Both
One of the biggest mistakes I see home cooks make is putting pizza onto a surface that isn’t hot enough.

The steel or stone needs time to absorb heat before the dough is placed on it. A properly heated surface gives the pizza immediate contact with a substantial amount of stored thermal energy.
For a conventional home oven, I recommend following the manufacturer’s instructions and allowing plenty of time for the cooking surface to fully heat. An infrared thermometer can also be useful for checking the surface temperature.
Don’t rush this stage. Five extra minutes of preheating can be less frustrating than five minutes spent wondering why the bottom of your pizza is still pale.
4. Durability and Maintenance
This is another area where pizza steel has a major advantage.
A steel plate is extremely resistant to physical impact and won’t crack from thermal shock in the same way a ceramic or cordierite stone can. You can drop a stone or expose it to a sudden temperature change and potentially end up with a broken cooking surface.
A steel does, however, require protection against moisture. Depending on the type and manufacturer’s instructions, it may need seasoning and should be dried thoroughly after cleaning to reduce the risk of rust.
Pizza stones don’t rust, but they require more careful handling. Never move a very hot stone directly into a cold environment or expose it to cold water, as sudden temperature changes can cause cracking.

5. Which Is Better for Bread?
This is where the decision becomes less straightforward.
If you primarily make pizza, pizza steel is particularly attractive because its rapid heat transfer can produce excellent bottom browning.
But if your kitchen revolves around pizza, bread, flatbreads, and general baking, a pizza stone can be a very practical all-purpose baking surface.

So I wouldn’t choose solely on the basis of pizza performance if you’re planning to use the surface for many other types of baking.
6. Which Is Better for Beginners?
For a beginner who mainly wants to make pizza at home, I’d choose based on your priorities.
Choose pizza steel if you want:
- A very crisp, well-browned bottom crust
- Fast heat transfer
- Excellent performance in a conventional oven
- A highly durable cooking surface
- A surface that can handle repeated heavy use
Choose pizza stone if you want:
- A versatile surface for pizza and bread
- A traditional baking approach
- A generally lighter cooking surface
- No concerns about rust
- A more affordable way to improve homemade pizza
Neither option eliminates the need to learn proper pizza technique. Dough handling, oven temperature, preheating, and topping quantity remain important.
Pizza Steel vs Pizza Stone for Different Types of Pizza
Your preferred pizza style can also influence the decision.
For New York-style pizza
Pizza steel: Excellent choice.
The strong heat transfer helps develop a crisp, browned underside while keeping the crust relatively flexible.
For thin-crust pizza
Pizza steel: Excellent choice.
The rapid transfer of heat is particularly useful when you want strong browning without an unnecessarily long baking time.
For Neapolitan-style pizza
Pizza stone: A very good option, particularly in an oven designed for very high temperatures.
Traditional Neapolitan pizza is normally cooked extremely quickly at very high temperatures.
If you’re using a dedicated 800–900°F outdoor pizza oven, however, follow the oven manufacturer’s recommendations rather than automatically assuming a steel is better.
For bread and flatbreads
Pizza stone: Slight advantage for versatility.
A stone makes an excellent hearth-style baking surface for bread, flatbreads, and other baked goods.
Is Pizza Steel Better Than Pizza Stone?
For most conventional home ovens, I would give pizza steel the overall performance advantage when the primary objective is a crispy, deeply browned pizza base.
The reason isn’t that steel gets magically hotter. Instead, its material properties allow it to transfer heat efficiently from the preheated surface into the dough.
But that doesn’t make pizza stones obsolete.
A quality cordierite stone remains an excellent choice for home cooks who want one surface for pizza, bread, flatbreads, and other baking. It’s also a proven and relatively simple approach that can deliver excellent results when properly preheated.
Recent scientific work on pizza baking reinforces an important point: the cooking surface is only one part of the equation. Pizza quality depends on temperature, heat-transfer mechanisms, moisture, dough characteristics, toppings, and cooking time.
Pizza Steel vs Pizza Stone: My Conclusion as a Chef
When I bought one specifically for a home oven and my priority was the crispiest possible pizza crust, I chose a pizza steel.
Its high thermal conductivity gives it an advantage when you’re trying to extract more performance from a conventional oven.
However, when I wanted a versatile baking surface for pizza, bread, flatbreads, and other baked foods, I was perfectly comfortable choosing a quality cordierite pizza stone.
In other words:
- Best for maximum pizza crispness: Pizza steel
- Best for versatile baking: Pizza stone
- Best for durability: Pizza steel
- Best for traditional stone-baked cooking: Pizza stone
- Best overall for a typical home pizza enthusiast: Pizza steel
And whichever you choose, remember the chef’s rule: preheat thoroughly, keep the toppings under control, and give the cooking surface time to recover between pizzas.
